<p><P>PROBLEM TO BE SOLVED: To provide a method for producing white distilled liquor, capable of shortening its fermenting period and increasing the obtained amount of an alcohol. <P>SOLUTION: This method for performing an alcohol fermentation of the mash of the white distilled liquor by preparing a raw material of the white distilled liquor which isαform-treated with a normal method and/or malt produced from anαform-treated raw material is provided by putting the crushed white distilled liquor raw material and/or malt into a fermenting vessel, or crushing the raw material and/or malt after putting them in the fermenting vessel. Thereby, as compared with the conventional methods for producing the liquor, it is possible to shorten the fermenting period and increase the obtained amount of the alcohol. <P>COPYRIGHT: (C)2006,JPO&NCIPI</p> |
