<p><P>PROBLEM TO BE SOLVED: To provide a method for producing white distilled liquor, capable of shortening its fermenting period and increasing the obtained amount of an alcohol. <P>SOLUTION: This method for performing an alcohol fermentation of the mash of the white distilled liquor by preparing a raw material of the white distilled liquor which isαform-treated with a normal method and/or malt produced from anαform-treated raw material is provided by putting the crushed white distilled liquor raw material and/or malt into a fermenting vessel, or crushing the raw material and/or malt after putting them in the fermenting vessel.
