Hydrogenation of functional groups in hydrogenatable substrates having hydrogenatable functional groups with different reactivities, comprises carrying out hydrogenation under process conditions, which are adapted to the activity of a catalyst used, where temperature is low, substrate concentration is high, and diffusivity is high to provide a selective hydrogenation. Hydrogenation of functional groups in hydrogenatable substrates having hydrogenatable functional groups with different reactivities, comprises mixing hydrogen gas with the substrate and a solvent; bringing the mixture into contact with a catalyst under predetermined conditions of concentration, pressure, temperature, and time, where hydrogenation is carried out under process conditions, which are adapted to the activity of the catalyst used, where temperature is low, substrate concentration is high, and diffusivity is high to provide a selective hydrogenation of a functional group having a higher reactivity than one which has a lower reactivity. An independent claim is also included for a partially-hydrogenated product in the form of fatty acids or fatty acid derivatives, which have a reduction level of 18:3, i.e. ccc-fatty acids of >=85%, having a trans-fatty acid (cct, ct, t) content in the form of S-II-number of =50, and a selectivity in the form of S-Ln,-number of >=1.5.
