INHIBITOR OF OOZING OF OIL AND FAT

摘要

PROBLEM TO BE SOLVED: To provide an oil and fat composition suppressed in oozing of oil and fat, and to provide food using chocolate, excellent in texture and appearance obtained by using the oil and fat composition.

SOLUTION: An inhibitor of oozing of oil and fat comprises polyglyceryl fatty acid ester essentially having behenic acid and unsaturated fatty acid as the constituent fatty acid. The oil and fat composition suppressed in oozing of oil and fat and excellent in appearance and melting in the mouth is obtained by adding the polyglyceryl fatty acid ester to oil and fat. The food using chocolate obtained by using the oil and fat composition is also provided.
