METHOD FOR PRODUCING FERMENTED TEA

PROBLEM TO BE SOLVED: To provide a method for producing fermented tea in a short period and improving yield while retaining bioactivation peculiar to fermented tea. SOLUTION: This method for producing the fermented tea having≤5 wt.% of caffeine comprises fermenting tea leaves in the coexistence with tea stems. The method comprises preferably including further≥30 pts.wt. of tea stem based on 100 pts.wt. of tea leaf, and 0.001-1 wt.% of specific microorganism (mold) based on the total amount of tea leaves and tea stems followed by fermenting, and keeping 32°C or above at least for 5 h at the time of fermentation.
