<P>PROBLEM TO BE SOLVED: To provide a plastic oil and fat composition with long shelf life, having unique and good taste, good melting in the mouth, good plasticity while containing much palm stearin which has been hard to be use as a plastic oil and fat raw material, further prevented from whitening (fat blooming) due to coarsening of the oil and fat crystal, without using any special apparatus, and to provide a method for producing the plastic oil and fat composition, and a food obtained by using the plastic oil and fat composition. <P>SOLUTION: This plastic oil and fat composition contains lard in a ratio of 1.0-3.0 pts.wt. to 1 pts.wt. of palm stearin, and an oil phase where SFC (solid fat content) is 20-60% at 10°C and 10-40% at 20°C. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
