<P>PROBLEM TO BE SOLVED: To provide a vacuum impregnation device applying aroma to foodstuff, smoking the foodstuff and applying again the aroma and the smoking components getting off from the foodstuff when subjected to vacuum cooling. <P>SOLUTION: The vacuum impregnation device is provided with a treatment tank 2 charged with the foodstuff 1, decompression means 5-7 in the treatment tank 2, a pressure-restoring means 13, 14 for restoring pressure in the decompressed treatment tank 2, a gas supplying resource for impregnation 15, and a control means 19. The gas supplying resource 15 stores or generates gas with which the foodstuff 1 is impregnated, and leads out the gas for impregnation to the inside of the treatment tank 2 during restoring the pressure by the pressure-restoring means 13, 14. The control means 19 controls the decompression means 5-7 and the pressure-restoring means 13, 14 to keep the pressure inside the treatment tank 2 where the gas for impregnation is led under the atmospheric pressure to aim at impregnating the foodstuff 1 with the impregnating components. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
