<P>PROBLEM TO BE SOLVED: To provide a method for producing fine particles with enclosed fats and oils which enclose the fats and oils in spherical shells comprising protein, while controlling the diameter of the particles in a desired size. <P>SOLUTION: The invention relates to the method for producing fine particles with enclosed fats and oils comprising a fine particle producing step producing fine particles composed of emulsified fats and oils by ejecting emulsified fats and oils with flowability obtained by mixing fats and oils and a protein, from a nozzle 12 and breaking by air flow, a particle size controlling step controlling amount of the emulsified fats and oils ejected from the nozzle 12, and a drying step drying the fine particles produced in the fine particle producing step by a warm wind or spray drying in a drying atmosphere. The fine particles with enclosed fats and oils is produced according to the method by producing fine particles with a layer structure comprising inside composed of fats and oils and outside part composed of protein while controlling size of the particles, and then drying the fine particles while strictly keeping the layer structure. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
