<P>PROBLEM TO BE SOLVED: To provide Jerusalem artichoke-containing food increased in safety as health food richly containing inulin. <P>SOLUTION: The Jerusalem artichoke-containing food safer and most suitable for health food is obtained by washing gathered fresh Jerusalem artichoke in a process 1; peeling the Jerusalem artichoke in a process 2 followed by cutting the Jerusalem artichoke in a process 3; drying the Jerusalem artichoke in a process 4; roasting the Jerusalem artichoke in a process 5; and thereafter pulverizing the Jerusalem artichoke in a process 6. The Jerusalem artichoke is peeled before being dried so as to reduce inclusion of soil germs, and roasted at a high temperature so as to wipe out popular germs and also coliform bacillus. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
