The invention relates to the use of beans essentially free from phytohemagglutinin for extracting the alpha-amylase inhibitor (hereinafter also ~phaseolamin~), the extract enriched in phaseolamin, the highly purifie d extract, and also the dietetic and pharmaceutical compositions that contain, it; the invention also relates to a process for preparing the above extract and for the immobilisation of phaseolamin on an inert solid support.
