<P>PROBLEM TO BE SOLVED: To provide a fat-and-oil composition comprising fat and oil with little by-products and a high content of conjugated trienoic acids, and a simple manufacturing method therefor, as well as a foodstuff, an emulsified fat-and-oil composition and a cancer preventing agent, using the fat-and-oil composition. <P>SOLUTION: This conjugated trienoic acid-containing fat-and-oil composition comprises fat and oil with aliphatic trienoic acids having a conjugated double bond structure, the amount of which is increased to not less than 0.1 mass% based on the constituent aliphatic acids by thermally treating with an acidic material, an animal or vegetable oil having aliphatic trienoic acids having a conjugated double bond structure in an amount of not more than 0.01 mass% based on the constituent aliphatic acids. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
