PROBLEM TO BE SOLVED: To provide a method for heat-treating tea plucked new shoot intended for solving such problems that, in a conventional method comprising measuring time and controlling it in heat-treatment of tea plucked new shoot, the reproductivity of time from contact of tea plucked new shoot with a heated drum surface to emission of steam after vaporization of moisture is low because of properties such as total fiber level and sprout length caused by moisture and growth degree of tea plucked new shoot and accurate control is difficult, and also air temperature in the rotary drum is easily influenced by ambient temperature environment and it is difficult to bring the temperature of tea plucked new shoot to an object to be controlled because of its uncertain contact with the tea plucked new shoot. SOLUTION: This method for heat-treating tea plucked new shoot comprises measuring the temperature at the outer periphery of the cylindrical rotary drum followed by heating it to come to a predetermined parching temperature, throwing tea plucked new shoot into the drum followed by parching treatment, determining the finish of parching process of tea plucked new shoot when the outer peripheral temperature of the rotary drum reaches the predetermined parching temperature and performing a next process treatment.
