<P>PROBLEM TO BE SOLVED: To provide crustacean material for processing that is obtained by utilizing the crustacean waste occurring in food processing, for example, head and shells of crustacea, an edible oil including crustacean material and a method for producing the edible oil. <P>SOLUTION: The lobster material as a crustacean raw material is prepared by seasoning waste heads and shells remaining after removing the meat parts with salt, cooled in a refrigerator for a prescribed time, then calcined in a calciner at a prescribed temperature for a prescribed time and crushed with mixer. The formed processing crustacean material can be used as a seasoning or flavor or the material can be mixed with edible oil or other materials to provide edible oil having the crustacean flavors.
