The invention relates to derivatives of saccharide and itols having an O-n-alcanoyl group an O-ortho-acetylsalicyloyl group and the uses thereof as food additives or non-food additives or as medicaments. One of the aims of the invention is to provide novel compounds, derivatives of saccharides and itols, comprising two different ester groups and corresponding to general formula (I), wherein the substrate Sub represents a saccharide derivative, R1C(O) represents the ortho-acetylsalicyloyl, %C(O) represents an n-alcanoyl group wherein R2 is an n-alkyl group containing 1 - 17 carbon atoms, and preferably butyl. Another aim of the invention is the use of said derivatives as compounds for the preparation of food additives or non-food additives or medicaments, particularly in the treatment of enterocolitis of multiple etiologies, ulcers, adenomas, intestinal carcinomas and polyposes, or for the preparation of colic hydrotherapy solutions or enemas in human beings or animals i.e. farm animals or pets.
