<P>PROBLEM TO BE SOLVED: To provide a method for producing noodles such as buckwheat noodles, Japanese wheat noodles and flat wheat noodles and a noodle production apparatus, particularly a noodle-production method and apparatus movable or installable in a narrow shop space, and producing edible noodles from noodle flour and water in a short time after getting an order even for one person without touching the material with hand. <P>SOLUTION: The noodles are produced by the noodle producing method and apparatus by the following steps. Noodle flour and water of one or several servings are charged from a flour charging part containing noodle flour and a water charging part to a stirring part, the noodle flour and water are stirred and mixed in the stirring part to form one or several balls, a movable bottom plate of the stirring part is shifted to open the bottom of the stirring part, the balls are transferred to an extrusion cup, the ball in the extrusion cup is pressed with a press and extruded through an extrusion port having a number of nozzles in the form of noodle strings, the extruded noodle strings are put into a boiling part furnished with a movable basket and boiled in hot water at a proper temperature, the boiled noodles are transferred from the movable basket to a noodle washing part and the noodles are washed and cooled to obtain the product. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
