<P>PROBLEM TO BE SOLVED: To obtain a vitamin B<SB>1</SB>derivative composition having preservation stability without depositing thiamine lauryl sulfate when preserved at room temperature and in a refrigerated state and also having salting out resistance when added to liquid foods, and effectively used as a nutrition enhancer and a duration enhancer for soy sauce, Miso (fermented soybean paste), sauce and foods using those, and a food additive. <P>SOLUTION: The food additive is provided by adding a specific nonionic surfactant containing polyoxyethylene sorbitan monooleate or hexaglycerol monolaurate as a main ingredient to an ethanol solution or a water containing ethanol solution of thiamine lauryl sulfate which is an anionic surfactant. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
