This invention provides a process for the preparation of dry sliced tomato/dry diced tomato/dry tomato powder and products thereof which comprises washing of deep red color tomatoes, slicing and dicing them, treating the slices or dices by immersing in calcium chloride solution or calcium gluconate solution or calcium lactate solution or potassium metabisulfite solution or a combination thereof to effect antibrowning quality.
