PROBLEM TO BE SOLVED: To provide a method for producing volatile components easily collecting the volatile components from a palatable material with high efficiency, to obtain volatile fractions highly containing the volatile components in the palatable material, and to provide food and drink containing the components. SOLUTION: The volatile component is produced by extracting in steam the palatable material comprising coffee beans after roasting or tea leaves after manufacturing in a sealed container. The volatile component contains a greater part of flavor components as the origin of flavor of the palatable material and a part of taste components (chlorogenic acid, formic acid, acetic acid, caffeine, torigonelline, or the like) affecting taste. The steam extraction is performed by collecting steam after bringing the palatable material into contact with water vapor, saturated vapor or superheated steam, and it is most preferable to use superheated steam. The inside of the sealed container is preferably under the atmosphere of inert gas such as nitrogen gas. The food-and-drink contains the volatile component and also preferably contains a water extract obtained by extracting in water the palatable material after the steam extraction.
