The invention concerns cyclodextrin derivatives of formula (I), wherein: R<1> = -NH-E-AA-(L<1>)p(L<2>)q; with E = C1-C4 hydrocarbon group, linear or branched, optionally with one or more heteroatoms; AA = residue of an amino acid; L<1> and L<2> = C6-C24 hydrocarbon group with optionally one or more heteroatoms; p and q = 0 or 1, one at least 0; R<2> = H, -CH3, isopropyl, hydroxypropyl, sulphobutylether; R<3> = H or R<2> except when R<2> = hydroxypropyl; all R<4>'s = -OH or R<2> except when R<2> = hydroxypropyl, or at least one of the R<4>'s = R<1>; n = 5, 6 or 7. The invention also concerns a method for preparing said derivatives, inclusion complexes and organized surfactant systems containing same.
