PROBLEM TO BE SOLVED: To provide a method for efficiently extracting pinbones remaining in fillets when a fish is filleted to three pieces. SOLUTION: The method comprises the following practice: A pair of left and right press members 2 and 2 for pressing both the back and belly parts of a fillet F are set up above the conveyance midway of a conveyor 1 for the fillet F, the fillet F is then compressed by the pressing force of the press members 2 and 2 to project pinbones B upward, and under keeping this condition, the projected basal ends of the pinbones B are butted on the tip of a pawl member 3 disposed in between these press members 2 and 2 and the pinbones B are nipped with the tip of the pawl member 3 and the teeth 4a of a gear 4 rotating in contact with the range from the tip to upper surface of the pawl member 3 to extract the pinbones B with the help of the rotating force of the gear 4.
