PROBLEM TO BE SOLVED: To provide a simple oil-water separation method enhanced in certainty, and an oil-water separator. SOLUTION: The oil-water separation method is adapted to oil mixed with an emulsified aqueous solution wherein primary bonded particles of oil particles and an anionic surfactant are emulsified, and includes a addition step S20 for adding a cationic surfactant to the oil and a separation step S30 for utilizing a specific gravity separation method after the addition step S20 is performed to regenerate the oil.
