<p><P>PROBLEM TO BE SOLVED: To produce alcoholic beverages containing large amounts of active ingredients such as vitamines, lipids and minerals derived from rice embryos, and having excellent flavor. <P>SOLUTION: The embryos are used as a part of rice for brewing Sake (rice wine) in the fermentation of unrefined sake, for example by adding the embryos to the unrefined Sake at the last fermentation or the fourth step, and squeezing the brewed Sake. The squeezed Sake is filtered through active carbon. Or the squeezed Sake in a proper proportion is mixed with a normal refined Sake. The obtained formed Sake contains large amounts of the active ingredients derived from the rice embryos such as thiamine. In another aspect, the rice embryos are added to and soaked in alcohol to extract the active ingredients. The alcohol with the extracted embryo components is added to an unrefined Sake for the refined Sake before the squeezing, produced by a conventional method, and the resultant mixture is squeezed. <P>COPYRIGHT: (C)2005,JPO&NCIPI</p> |
