PROBLEM TO BE SOLVED: To provide a method for the separation of prolamin proteins to easily purify the prolamin proteins in high purity, increase the decoloration degree and enable the stable economical production of zein. SOLUTION: The invention provides (1) a method for the separation of prolamin proteins from an aqueous acetone solution containing prolamin proteins by adding acetone to the solution to increase the acetone concentration to 81-90 wt.% and separate and recover the insolubilized prolamin protein as precipitate and (2) a method for the separation of prolamin proteins from an aqueous ethanol solution containing prolamin proteins by adding ethanol to the solution to increase the ethanol concentration to 96-99 wt.% and separate and recover the insolubilized prolamin protein as precipitate.
