摘要 PURPOSE: Steamed pig's feet(jokbal) obtained by coating pig's feet whose bone is removed with seasoning liquid containing herbal extract, fruit juice and spices and aged in a refrigerator is provided. The product is eliminated in the odor of pork and has a chewy or elastic texture and soft taste and flavor. CONSTITUTION: Pig's feet whose bone is removed are coated with seasoning liquid containing 0.5L herbal liquid, 1L fruit juice and spices and aged in a refrigerator of 5 to 7deg.C for 48 to 60hr. The herbal extract is obtained by extracting 0.3% by weight of each of Glycyrrhizae Radix, star anise, Codonopsis lanceolata, Cinnamomi Cortex, dried red pepper, green tea leaves, bay leaves and ginseng with 3L water for 2hr. The fruit juice contains 0.7% by weight of pears, 0.7% by weight of apples, 0.7% by weight of kiwi fruits, 0.7% by weight of pineapples, 0.7% by weight of onion, 0.5% by weight of garlic and 0.2% by weight of ginger. The spices contain 0.5% by weight of 0.5% by weight of corn syrup, 0.5% by weight of clear stained rice wine, 0.5% by weight of soy sauce, 0.3% by weight of vegetable oil, 0.3% by weight of sesame oil, 0.2% by weight of caramel, 0.2% by weight of brown sugar, 0.2% by weight of red pepper seed oil, 0.2% by weight of purified water, 0.1% by weight of coffee, 0.1% by weight of salt-fermented shrimps.
