<P>PROBLEM TO BE SOLVED: To provide a stick-like snack food composed solely of mushroom and produced by using Flammulina velutipes and provide a method for the production of the food. <P>SOLUTION: The method for producing the stick-like snack food of Flammulina velutipes comprises (1) a step of washing the edible part of raw Flammulina velutipes, (2) a step of the preliminary drying of the washed mushroom until the weight is reduced to about 60-90 mass% of the raw mushroom, (3) a step of pressing the predried Flammulina velutipes under heating or after heating to form a flat product and dry to a prescribed water content, and (4) a step of performing the seasoning of the mushroom at a proper stage after the washing step (1). <P>COPYRIGHT: (C)2005,JPO&NCIPI |
