PROBLEM TO BE SOLVED: To provide both a method by which the gelation of a ground fish meat with a board can properly be carried out without using a retainer in a process for producing a boiled fish paste with the board, and an apparatus therefor. SOLUTION: This apparatus for gelation of a ground fish meat comprises a supporting means for the ground fish meat with a board (an endless belt conveyor) capable of supporting a liquid housing tank, i.e., a hot water tank 12 and the ground fish meat which is made to stick onto the board and formed thereon so as to place the board under the formed ground fish meat and protrude the upper part of the formed ground fish meat from the surface of the liquid in the tank and a heating means 18 for heating the upper space of the liquid in the liquid housing tank 12. The endless belt conveyor having a nearly horizontal upper running part 22 and a lower running part 24 can be used as the supporting means for the ground fish meat with the board and the upper horizontal running part 22 is capable of carrying and conveying the formed ground fish meat with the board in the liquid. A far infrared heater set above the liquid surface can be used as the heating means 18. |
