PURPOSE: A kitchen ventilation method and a system are provided to reduce temperature difference between the room air and the external and accordingly to prevent the dew formation by pre-heating the external air supplied to the kitchen by using the residual heat of the polluted gas. CONSTITUTION: In a kitchen ventilation method, the polluted gas containing the residual heat of a kitchen is exhausted naturally to the outside through an exhaust duct(11) on the ceiling of the kitchen by the exhaust pressure of the gas ejected through a discharge duct(2) by operating a kitchen hood(1). The external air fed into the kitchen through a supply duct(21) from the outside exchanges heat with the polluted gas containing the residual heat of the kitchen by operating a supply fan(22) and then the heat exchanged external air is pre-heated and supplied to the kitchen.
