<P>PROBLEM TO BE SOLVED: To obtain an emulsifier for a coffee whitener having low viscosity and excellent in dispersibility with coffee and emulsification stability, and to obtain the coffee whitener using the emulsifier. <P>SOLUTION: The emulsifier for the coffee whitener contains (a) a polyoxyethylene sorbitan fatty acid ester and (b) at least one kind selected from a polyglyceryl fatty acid ester, a sorbitan fatty acid ester and a sucrose fatty acid ester. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
