PURPOSE: A method of making garlic taffy by saccharifying glutinous rice, malt powder and water, mixing with powder of garlic, Coix seeds, barley, black beans and the like and then molding is provided. The product is reduced in the pungency of garlic and has an efficacy of garlic. CONSTITUTION: Garlic is steamed in a quartz vessel and dried while liquefying vapor. The dried garlic is freeze dried at -27deg.C, mixed with Coix seeds, barley, black beans and the like, roasted in a stone vessel such as quartz porphyry and then ground. Thereafter, a mixture of glutinous rice, malt powder and water in a ratio of 1:0.2:3 is saccharified, concentrated to a moisture content of 15 to 20%, mixed with garlic liquid and powder of garlic, Coix seeds, barley, black beans and the like and then molded.
