An instant thickener comprising, in wt.%, flour 60-80, starch 20-40, water 5-15, fatty matter 2-6, sodium bicarbonate 0-2 and emulsifier(s) 0.5-3. An Independent claim is included for a process of producing the thickener by treating at 80-180 degrees C and 50-160 bars for 30-60 seconds in a cooker-extruder provided with a means of flow inversion in its downstream two thirds. The material is cooled in the extruder to 60-100 degrees C after the flow inversion device. |
