The invention is an oil-in-water emulsion, comprising: (a) one or more interface-active substances A selected from the group consisting of glucose derivatives which are characterized by the structural formula where R is a branched or unbranched alkyl radical having 1 to 24 carbon atoms, where R1 and R2, independently of one another, are either a hydrogen atom or a branched or unbranched alkyl radical having 1 to 24 carbon atoms, (b) one or more interface-active substances B selected from the group consisting of substances of the general structural formula where R3, R4 and R5, independently of one another, are selected from the group consisting of H and branched or unbranched, saturated or unsaturated fatty acid esters having 8 to 24 carbon atoms in which up to three aliphatic hydrogen atoms may be substituted by hydroxyl groups and n is a number from 2 to 8, and (c) ascorbic acid. The invention also includes methods of preparing emulsions using the emulsifiers (a) and (b) and methods of using the emulsion in cosmetic or dermatological compositions for treating skin conditions.
