PROBLEM TO BE SOLVED: To provide a technology for efficiently producing anhydrous crystalline maltitol or a honey-containing crystal containing the anhydrous crystalline maltitol, by continuously generating seed crystal without adding any seed crystal from outside into a maltitol aqueous solution, forming maltitol slurry or massecuite and using the slurry or the massecuite. SOLUTION: The method for continuously producing honey-containing maltitol crystal comprises introducing an aqueous solution of≥88% purity maltitol (on the solid basis) of 92-98 wt.% concentration into a vessel, mixing up from few minutes to several hours to continuously generating seeds of anhydrous crystalline maltitol within a short time, cooling and kneading the slurry comprising the anhydrous crystalline maltitol seeds generated in that step so as to form maltitol magma, extruding the magma from an extruding nozzle to obtain honey-containing maltitol crystal. By the method, without returning a part of the honey-containing crystalline powder, the maltitol honey-containing crystal is continuously produced. COPYRIGHT: (C)2005,JPO&NCIPI
