<P>PROBLEM TO BE SOLVED: To provide a large-sized salted and dried shrimp having fine appearance and good taste, and suitable for a gift; and to provide a method for producing the salted and dried shrimp enabling easy production of the salted and dried shrimp. <P>SOLUTION: The salted and dried shrimp is obtained by openly cut an abdominal segment part 2 adjoining a cephalothorax part 1 of a large-sized shrimp. The method for producing the salted and dried shrimp comprises the following process: vertically dividing only the abdominal-segment back shell 21 and the abdominal-segment meat part 22 of the abdominal segment part 2 adjoining the cephalothorax part 1 into two via a cut 3 longitudinally formed and ranging from their front ends to the vicinity of pinna caudalis 23; drawing the abdominal-segment back shell 21 and the abdominal-segment meat part 22 so that the right and left front end pieces 21a, 21a of the abdominal-segment back shell 21 divided into two inside the shell via the cut 3 are positioned directly behind the back part opening of a head shell 11, and the right and left front end pieces 21a, 21a are engaged to the back part opening edge of the head shell 11 to maintain the abdominal segment part 2 in an open state. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
