摘要 A food monitoring system (1) has means for the monitoring and control of a food product cooking process by sensing the colour and temperature of the food product. White light is delivered from a source (2) through colour sensor probe (6) to a food product sample (4). Reflected light in the visible colour range is delivered from the colour sensor probe (6) to a spectrometer (8) which generates a spectral pattern of the reflected light. This is analysed in a computer (10) with the aid of an artificial neural network to determine whether or not the food sample (4) is properly cooked. An optical temperature sensor probe (14) is operable to determine the temperature of the food product sample (4) for measuring the degree of cooking to meet food safety requirements. <Figure 1>
