The expression of PGU-1 gene for Pichia pastoris methylotrophic yeast consists of isolation from Saccharomyces cerevisiae yeast for e.g. fruit juice and wine production. The resulting strain synthesizes and secretes after induction a polygalacturonase pectinase of very high concentration.
