PROBLEM TO BE SOLVED: To provide a dextran-splitting enzyme having the activity of splitting dextran into oligosaccharides. SOLUTION: This dextran-splitting enzyme is extracted and refined based on the finding that a water-soluble fraction of blue cheese has the activity of splitting dextran into oligossacharides consisting mainly of isomaltooligosaccharide. The dextran-splitting enzyme has the following characteristics: molecular weight is about 65 kDa, isoelectric point is about 4.9, optimum pH is about 4.5-6.5, optimum temperature is about 37°C, and having a specific N-terminated amino acid sequence.
