<P>PROBLEM TO BE SOLVED: To provide a method for producing dried fruits and vegetables adapted for intention of both delicious foods and health and to provide an apparatus for production. <P>SOLUTION: The apparatus for producing the dried fruits and vegetable foods is provided with a plurality of drying chambers (12, 14, 16, 18 and 20), a transporting means (28) for successively passing materials of the fruits and vegetables regulated to a required size through the drying chambers, microwave generators (50, 52, 54, 56 and 58) for applying microwaves of a required output to the materials passed through each of the drying chambers, respectively and hot air supply means (60, 62, 64, 66 and 68) regulating the output for applying hot air of the required output (temperature and air flow rate) to the materials passed through the interior of each of the drying chambers, respectively.
