METHOD FOR PRODUCING WATER SOLUBLE POLYSACCHARIDES CONTAINING BETA-GLUCAN FROM FRUIT BODY OF LENTINUS EDODES

PURPOSE: A method for producing water soluble polysaccharides containing beta-glucan from a fruit body of Lentinus edodes is provided to improve the production efficiency through a simple process with reduced cost. The method is also environmentally friendly due to the exclusion of an organic solvent. CONSTITUTION: The method for producing water soluble polysaccharides containing beta-glucan from a fruit body of Lentinus edodes comprises: preparing an alkali extract of a fruit body of dried Lentinus edodes; neutralizing the extract with an acid solution and removing the precipitates of proteins and other insoluble component; desalinating and condensing the resulted product; carrying out recondensation and purification of the resulted product through ultrafiltration to obtain water soluble polysaccharides solution containing beta-glucan with a molecular weight of 10000 or more; and carrying out lyophilization of the obtained solution.
