PROBLEM TO BE SOLVED: To provide a method for mass-producing a highly safe culture solution of a basidiomycete having an anti-freezing activity at a low cost, the culture solution obtained by the method and uses, or the like, thereof. SOLUTION: The method for producing the culture solution having the anti-freezing activity is characterized by culturing and proliferating the basidiomycete in a liquid culture medium and then culturing the resultant fungal body in a liquid culture medium at a lower temperature than that in the proliferation step. The culture solution obtained by the method is provided and a method for freezing and preserving a food and a biomaterial using the culture solution is provided.
