PROBLEM TO BE SOLVED: To provide a method for efficiently producing an ester by improving enzyme activities by a simple method in an esterification or transesterification reaction by an enzyme. SOLUTION: The method for producing a specific ester as expressed by formula (1) (wherein, R<SP>1</SP>is a hydrocarbon group which may be substituted; R<SP>2</SP>is a hydrocarbon group which may be substituted, with the proviso that the total of the numbers of a hydroxy group, an alkoxy group and an acyloxy group is 0 or 1) or the like by esterification reaction or transesterification reaction in the presence of a biocatalyst, involves bringing the raw materials for the reaction into contact with an adsorbent before and/or during reaction.
