PURPOSE: A method of crystallizing phosphatidyl choline by obtaining an egg yolk oil increased in the content of phosphatidyl choline in high yield from egg yolks and then separating high purity crystal therefrom is provided which crystallizes and purifies phosphatidyl choline easily, at low cost and in high yield. CONSTITUTION: Egg yolk powder is added to an organic solvent in ratio of 1:5 at low temperature of -5 to 10 deg.C, agitated for 10min to 2hr, filtered and then washed. Thereafter, the obtained egg yolk powder is added 5 to 10 times with an extraction solvent, extracted at room temperature, filtered, washed and concentrated under reduced pressure to produce an egg yolk oil having a phosphatidyl choline content of 75 to 83%. The organic solvent is selected from n-hexane, diethylether, acetone and tetrahydrofuran and the extraction solvent is selected from methylene chloride, chloroform, methanol, ethanol and water.
