PRODUCTION OF SWEET RICE DRINK AS SPORTS DRINK USING BOILED RICE AND SCHIZANDRAE FRUCTUS AS MAIN COMPONENT

PURPOSE: A method of producing a sweet rice drink as a sports drink using boiled rice coated with dietary or chitosan and Schizandrae Fructus as main component is provided. The sweet rice drink has organoleptic properties together with functionality for controlling the secretion of sweat and quenching thirst and is thus useful as a sports drink. CONSTITUTION: The Schizandrae Fructus-sweet rice drink is prepared by the steps of: coating dietary fiber or chitosan alone or a mixture thereof on the surface of rice; boiling the coated rice; immersing Schizandrae Fructus in 50 to 150 times of water to give Schizandrae Fructus solution; adding 0.5 to 10% by weight of the Schizandrae Fructus solution to malt powder; removing dregs from Schizandrae Fructus solution and adding 1 to 10% by weight of boiled rice to the Schizandrae Fructus solution; and leaving the mixture alone at 40 to 70deg.C until a specified amount of grains of boiled rice are immersed.
