Process and assembly to de-skin fish filet lifts and removes skin, fatty surface and silver tissues, and filet in three discrete operations

In a process to de-skin a fish filet, following the respective separation process, the skin, surface layer and filet are removed and collected in discrete respective product flows (1, 2, 3). In the skin is separated from the flesh by a first cutting blade (17) and lifted clear, followed by removal of the flesh surface layer by a second cutting blade (21) parallel to the first (17). The flesh surface layer is then removed together with the filet. Also claimed is a commensurate de-skinning assembly in which the skin is discharged (1) through a gap (16), the flesh surface layer (2) through a second gap, and the fish filet (3) to a removal conveyer belt (13). The surface layer is discharged via a conduit to a holding container from which it is subsequently removed by a vacuum or a rinsing agent.
