<P>PROBLEM TO BE SOLVED: To provide a pounding apparatus which can be operated similarly to the operations of conventional pounding apparatuses and can thereby easily reproduce the conventional texture of rice cake. <P>SOLUTION: While a cam controlled with a motor is rotated in the pounding apparatus, a pounder head portion fixed to a pounder supported on a support is reciprocated between the lowest position in a mortar and the highest lifted position. An operation for lifting the pounder head portion from the position in the mortar to the lifted position is carried out by the synchronization of the rotated cam with a pushing lever attached to the pounder.
