<P>PROBLEM TO BE SOLVED: To provide a frothing O/W-type emulsion having an oil-and-fat content of as low as 10-35 wt.% and, nevertheless, having high emulsion stability, whipping property, shape-retainability of whipped product, meltability in the palate, palatability, taste and flavor and provide a method for the production of the emulsion. <P>SOLUTION: The O/W-type emulsion contains an oil-and-fat, a milk solids-non-fat, water and an emulsifier. The emulsion has an oil-and-fat content of 10-35 wt.% and contains polyoxyethylene sorbitan monooleate as the emulsifier. The invention further provides a frothing O/W-type emulsion having a low oil content and an overrun of 60-250% and a method for the production of the emulsion. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
