PROBLEM TO BE SOLVED: To provide a method for producing an alcohol from a sugar obtained by hydrolyzing waste construction materials by fermentation so as to perform the fermentation process efficiently. SOLUTION: This method for producing the alcohol or an organic acid comprises a saccharification process of hydrolyzing the waste construction materials to produce the sugar, a fermentation pre-treatment process of treating a sugar solution obtained by the saccharification process, and a fermentation process of obtaining the alcohol by the fermentation of the sugar. The fermentation pre-treatment process is a process of performing the evaporation of the sugar solution for removing a fermentation inhibitory substance inhibiting the fermentation process, and also includes a ventilation process for removing the fermentation inhibitory substance inhibiting the fermentation by passing air into the sugar solution.
