<P>PROBLEM TO BE SOLVED: To suppress discoloration and fading for heat and light by pretreating the surface of a food material with low-pressure and high-temperature superheated steam and then coloring the resultant surface of the food material with a coloring material. <P>SOLUTION: A food product is colored by including a step of treating the surface of the food material with the low-pressure and high-temperature superheated steam and a step of coloring the surface of the food material with a coloring material. The temperature of the low-pressure and high-temperature superheated steam is preferably 200-600°C and the treating time is preferably 5 to 180 s. The colored food product is produced by including a step of treating the surface of the food material with the low-pressure and high-temperature superheated steam and a step of coloring the surface of the food material with the coloring material. <P>COPYRIGHT: (C)2004,JPO |
