<P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing a potato snack having fine splits on the surface, and excellent texture. <P>SOLUTION: The method for producing the potato snack having the fine splits comprises a water-adding step for adding water to a raw material of the potato snack containing dried potato flakes in which the proportion of the flakes passing a sieve having 4.75 mm aperture and not passing a sieve having 425 μm aperture is ≥85 wt.%, and a seasoning so that the water content may be 55-70 wt.%, a step for forming a dough for the potato snack by mixing the resultant mixture, a step for forming the dough into a stick shape by extruding the dough from an extruder so as to form the fine splits on the surface, a step for freezing the obtained stick-shaped product, and a step for subjecting the frozen product to deep-frying under a reduced pressure. <P>COPYRIGHT: (C)2004,JPO |
