PURPOSE: Provided are functional noodles and a method for manufacturing the same using functional grain that is pretreated with chitosan, medicinal herb extracts, germinating the pretreated grain and inoculating medicinal mushrooms to the germinated grain, followed by cultivation, as well as gelatinized grain. The manufactured functional noodles have excellent colors and flavor, and contain abundant nutrients. CONSTITUTION: A method for manufacturing functional noodles comprises the steps of: inoculating the spawn of medicinal mushrooms into a mixture of 30-35 wt.% of gelatinized rice flour, 35-40 wt.% of gelatinized wheat flour, 20-25 wt.% of potato starch, 5-10 wt.% of gelatinized corn flour, and at least one kind of grain selected from the group consisting of unpolished rice, soy bean, red bean, job's tear, buck wheat, millet and mung bean, followed by cultivation to give functional grain, wherein the medicinal mushrooms contain Cordyceps militaris, Phellinus Linteus, Agaricus blazei murill, pine mushroom, Pleurotus ostreatus, Ganoderma Incidum Karst and Grifola frondosa; mixing the functional grain with water; extruding the mixture and boiling it, followed by forming.
