During residence in the separator tank (12) the wort is cooled by a heat exchanger (23) permanently connected to the separator tank. In a variant, some wort is removed from the separator (12). This is cooled in a heat exchanger outside the separator tank. It is then returned. A further minor variant is described. The wort is cooled to 90 degrees Centigrade at least. An Independent claim is included for corresponding plant.
