PROBLEM TO BE SOLVED: To provide a convection oven of the type of pulling a roll-in-cart into the oven capable of performing preheating efficiently. SOLUTION: This convection oven is provided with a preheating attachment 7 blocking an opening for pulling a shelf base of the cart existent between the inside of the oven and a door into the oven. The preheating attachment 7 has a blocking plate 51 covering a pulling-in opening of the shelf base and pressed against inlet packing inside the oven and is provided with an upper hook part 53 hooked on a pin erected at an inlet of the oven and a lower hook part 55 engaged with a bottom part of the inlet. By blocking a part equivalent to the pulling-in opening of the shelf base at the inlet of the oven by the preheating attachment 7, it is possible to prevent escape of heat and steam even without using the empty roll-in-cart when performing preheating.
